It’s a real lifesaver, whipping up in just 30 minutes and filling the kitchen with the inviting aromas of juicy Italian sausages, sweet bell peppers, and savory onions. This dish is about creating a moment of comfort amidst the chaos, where everyone can gather around the table and enjoy a meal that’s as satisfying as it is simple.

This is such a quick and easy dish to prepare and it’s perfect for a quick, satisfying dinner. The hardest part is just slicing the onions and peppers.

Start by heating a tablespoon of olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the sausages. Cook them until they’re nicely browned on all sides, which should take about 5 minutes. After they’re browned, remove the sausages from the skillet. You can slice them into bite-sized pieces if you like, or leave them whole if you prefer.

In the same skillet, add the remaining tablespoon of olive oil. Toss in the sliced bell peppers and onions. Stir them around and cook until they start to soften, about 5 minutes. The key here is to let them cook until they’re just tender but still have a bit of a crunch.

Next, add the minced garlic, dried oregano, dried basil, and a good pinch each of salt and pepper to the skillet. Stir everything together and cook for another minute. This allows the garlic to become fragrant and the herbs to infuse their flavors into the veggies.

Return the sausages to the skillet with the peppers and onions. Reduce the heat to medium and let everything cook together for about 10 minutes, stirring occasionally. This final simmer helps the flavors meld together beautifully and ensures that the sausages are cooked through and juicy.

To serve, fill each roll with a hearty portion of the sausage, peppers, and onions and that’s it. You might want to toast your hoagie rolls to add a bit of crunch, but that’s up to you.

Storing Leftovers

To store, allow the leftovers to cool completely before transferring them to an airtight container. It will keep well in the refrigerator for up to 3 days. If you want to freeze it, pack the cooled leftovers in freezer-safe bags or containers, and it will be good for up to 3 months; just thaw in the refrigerator overnight before reheating.

  • If you like your hoagie roll crispy, toast it lightly in the oven or on a separate skillet. Open up a hoagie roll and lay down a base of your chosen sauce if using, then pack in a generous portion of the sausage, peppers, and onions.
